Unlike many other meats, beef can be cooked and enjoyed in different ways using different types of cooking method. From blue to very well done, it can adapt to different people’s preferences and tastes. The same goes for whether it is fried, grilled, roasted, braised or boiled.
5 types of cooking:
Blue (1 min. on a very high heat) :
the meat is just seared on the outside and red in the middle
Rare (1½ mins. on a very high heat) :
the meat is just seared on the outside and red in the centre
Medium (1½ mins. on a medium heat) :
the meat is cooked for longer and only the very centre is still red
Well done (3 mins. on a low heat) :
the meat is cooked for longer and the centre stays a pinkish colour
Very well done (5 min ou plus à feu doux) :
the meat is completely cooked without any red or pink
5 methods of cooking :
the meat is seared and then cooked at a high temperature with fat
the meat is seared on a high temperature under a grill
the meat is cooked in the oven with a little or no fat
the meat is cooked in a pan with a lid in a little bit of liquid. It cooks very gently and for a long time until it is tender and tasty.
the meat is fully immersed in liquid and simmered for a long time.
